Old El Paso enchilada sauce
1 lb ground beef, 1 onion
1 can green chiles
3 cups shredded cheddar or co-jack cheese
12 flour tortillas
1 can mushroom soup
1 can tomato soup
sliced black olives
green onion (chopped).
Toppings: shredded lettuce, salsa, sour cream.

Brown beef with onion, drain off fat, add chiles. Remove from heat and cool slightly. Add 1-1/2 c shredded cheese and mix. Place 2 heaping Tbsp on each tortilla, roll up and place seam side down in 9 x 13 pan. In large bowl mix soups together, then stir in enchilada sauce until well blended. Pour this over tortillas and cover completely. Top with remaining cheese and garnish with chopped green onion and sliced black olives. Bake @ 375º for 30 minutes until bubbly hot. Serve with desired toppings.
