1 4-5 lb butterflied leg of lamb
1 c. dry red wine
3/4 c. soy sauce
4 lg. cloves garlic, crushed
1/2 c. fresh mint, chopped
2 tbsp. fresh rosemary or 1 tsp. dried rosemary
1 tbsp. coarse ground pepper

Directions:
Directions:
Combine the wine, soy, garlic, mint, rosemary and pepper. Pour over lamb and refrigerate 6 hrs. turning often.
Prepare grill for grilling. Drain the meat, reserving the marinade. Grill the lamb about 20 minutes on each side, basting often with the marinade.
Check lamb for doneness, then let rest 20-30 minutes. Cut into thin slices. Serve with mint jelly and summer veggies.
