1 box Angel Food Cake Mix or homemade
1 gallon Strawberry Ice Cream
1 (16 oz) container Cool Whip
Fresh strawberries, sliced

Directions:
Prepare cake as directed on the box and let cool.
After cooling, split cake into 3 layers. Remove ice cream from carton, and cut in half lengthwise and then in slices and place between layers making 3 layers of cake and two layers of ice cream. Place in freezer for about 1/2 hour and then frost whole cake with cool whip and freeze until set. Serve with fresh sliced strawberries. Truly a hot summers day delight.
Note: other ice cream flavors may be used

Jessica loved this ice cream cake that her Grandma would make. She could eat it for breakfast. I made this cake for Jessica on different occasions and she really enjoyed it. Jessica is truly our cherished "Angel". We all love and miss you, sweet Jessica.
