Ingredients: For Cookies: 1 doz. eggs- keep 3 egg whites 1/2 lb. of butter or 3/4 lb. butter 1/2 lb. of cisco 1/4 lb. crisco 1 2/3 c. sugar 1 t. vanilla 3 T. baking powder 1 t. salt 6 c. flour
For icing: 3 egg whites 1 lb. confectioners sugar 1 t. lemon flavoring

Directions:Melt and cool the butter and crisco together.
Beat eggs. Can use mixer or by hand Add cooled shortwening/ butter mixture Then, sift in dry ingredients ( I don't usually use a sifter) Knead until a smooth, easily held dough. It looks like pie crust.
Break a small piece off. Roll between your hands like a pencil. Cut off 2" Wrap around your index finger an press lightly until it closes. It will look like a knot. Repeat and repeat and repeat until the dough finally is gone. It will seem like forever!!!
Bake on a greased cookie sheet at 350 until golden brown.
Cool For icing: Beat egg whites with an electric mixer When they are foamy, add the sugar and lemon flavoring You can add food coloring to the icing for the desired color Ice cooled cookies. |

Notes: Marci Remember those old Italian ladies were always home cooking and baking for the family. This amount of time was a breeze for them. These cookies are worth the time and effort.
