2 - 10oz. pkgs. or 2 bunches of fresh broccoli
1/4 cup butter
1/4 cup flour
2 cups chicken broth
1/2 cup whipping cream
3 T. Sherry
1/2 tsp. salt
Dash of pepper
1/4 cup Parmesan cheese
3 whole chicken breasts, cooked and sliced

Cook broccoli in salted water and drain. Melt butter and add flour and chicken broth. Stir until thick. Stir in cream, Sherry, salt, and pepper. Arrange half of the sauce over the broccoli in a 9" x 13" baking dish. Top with chicken slices. Add most of the cheese to the remaining sauce and pour over chicken. Sprinkle with remaining cheese and bake at 350º for 20 minutes. Place under broiler until sauce is golden brown.

A tip for determining how much chicken to cook: One 3-1/2# ready-to-cook chicken will yield about 3 cups of diced, cooked chicken. Two whole chicken breasts (10 oz. each) yields 1-1/2 to 2 cups of diced or 12 thin slices of cooked chicken.
