1 C dry lentils
4 C water
1 medium onion, chopped
1 C chopped celery
1 C sliced carrot
2 tsp. instant chicken boullion granules
1 tsp. bottled minced garlic or 2 cloves garlic, minced
1/2 tsp. finely shredded lemon peel
1/8 to 1/4 tsp. ground red pepper
1 C cubed cooked ham
2 C chopped fresh spinach

Rinse and drain lentils. In a 3-1/2-to 4-quart slow cooker combine lentils, water, onion, celery, carrot, bouillion granules, garlic, lemon peel, and red pepper. Cover and cook on low heat setting for 7-8 hours or on high heat setting for 3-1/2 - 4 hours. If using low heat setting, turn to high heat setting. Add ham. Cover and cook for 10 minutes more. Stir in spinach. Ladle into bowls and serve immediately.
