3/4 lb unpeeled large fresh Shrimp
Foil
1 T Olive Oil
2 t Creole Seasoning-divided
1 large Red Bell Pepper-chopped
1/2 cup whole Kernel Corn
1/2 cup shredded Mexican Cheese
2 T minced fresh Cilantro
1 15oz can Black Beans-drained
Hot Cooked Rice

Peel shrimp and devein. Place shrimp in center of a 24-18" sheet of foil. Drizzle with oil and 1 t Creole seasoning. Tossing to coat. Sprinkle bell pepper and next 3 ingredients over shrimp. Top with black beans and remaiing 1 t. Creole seasoning. Fold opposite edges of foil together over shrimp. Crimp and fold remaining edges to seal. Place packet over med-hot coals, and grill covered for 1 min or bake @375º for 35 min. Serve over hot cooked rice.
