1 1/2 c. dark molasses, 1 c. packed brown sugar, 2/3 c. cold water, 1/3 c. shortening, 6 1/2 c. all-purpose flour, 3 teaspoons baking soda, 1 tsp. salt, 2 tsp. ground ginger, 1 1/3 tsp. ground cloves, 1 1/3 tsp. ground cinnamon, 1/3 tsp. nutmeg.

Decorators' Frosting: 2 c. powdered sugar, 2-3 T. water, just enough to make a frosting that can be used easily in a decorator's tube or envelope cone and yet hold its shape.

Mix molasses, brown sugar, water and shortening. Mix in remaining ingredients except frosting. Cover and refrigerate at least 2 hours. Heat oven to 350º. Roll dough 1/4 inch thick on floured board. Cut with floured ginger bread cutter or other favorite shaped cutter. Place about 2 inches apart on lightly greased cookie sheet. Bake until no indentation remains when touched, 10-12 minutes; Cool. Decorate with Decorators' Frosting: Mix powdered sugar and water or milk to make a thick frosting. Add food coloring.

We visited the prior home of grandfather Alphonse and ggrandpa Peter Gevelinger in Sandweiler, Luxembourg. In the tradition of Luxembourg, these are served on St. Nicholas Day (December 6) each year. They can be decorated with frosting or chocolate.
