1 Mango (peeled, cut into chunks)
1/2 small sweet or purple onion (cubed)
1 Tbs granulated sugar
1/2 cup red wine vinegar

1 cup light vegetable oil
Salt and pepper

Directions:
Directions:
Put first 4 ingredients into blender or food processor.
With machine running, add oil in a slow steady stream.
Season with salt and pepper to taste.

This sweet-savory dressing enlivens any greens, as well as salads where shrimp or chicken is the main attraction.
