2 (10 oz.) pkgs. frozen spinach, cooked
1 cup mayonnaise
1 can cream of mushroom soup
2 eggs, beaten well
1 small onion chopped fine (or ½ tsp. onion flakes)
1 cup cheddar cheese, grated
1½ cups herb stuffing mix, crushed
½ cup (1 stick) butter or margarine

Directions:

1. Drain cooked spinach well and put into a 9 X 13-inch casserole dish.
2. Stir next 5 ingredients into spinach; mix well.
3. Melt butter and stir in stuffing mix; sprinkle over spinach mixture.
4. Bake at 350° for 45 minutes.

This spinach casserole is delicious and different because of the use of the stuffing mix. I've had many requests for the recipe.
