RECIPE: Mama’s Meatballs & Sauce Serves 12

MEATBALLS:
2 cups Fresh Bread – crumbed
½ cup Milk
1 cup Parmesan Cheese
¾ chopped Onion
½ cup chopped fresh Basil
3 eggs
3 garlic cloves
¾ teaspoon black pepper
1 lb. Italian sausage, casings removed
2 lb. ground Chuck or Sirloin (extra lean)
½ cup Currants

SAUCE:
½ cup Olive Oil
2 cups chopped Onion
2 cups chopped Red Bell Pepper
1 cup chopped Celery
4 Garlic Cloves, chopped
5 28 oz cans Diced Tomatoes in Juice
1 cup chopped fresh Basil
Salt & Pepper

RECIPE: Garlic Bread

2 French Bread Loaves
Garlic Butter: ½ lb Butter, 2 Tablespoons Olive Oil, 2 garlic cloves, 2 Tablespoons Parmesan, 1 Tablespoon Basil

1. In a food processor place the garlic and olive oil and chop. Add the butter cut into pieces and process smooth. Add the Parmesan and basil.
2. Slice the bread in 1” rounds and spread with the butter. Toast in a 400 degree oven until brown.

1. Preheat oven to 350 degrees. Lightly oil baking sheet. Mix bread and milk in a bowl; let stand for 5 minutes.
2. Mix in Parmesan Cheese, onion, basil, eggs, garlic, and pepper. Add sausage, ground chuck and currants. Blend well.
3. Using wet hands, form into 2” balls, place on the baking sheet. Bake until brown, about 40 minutes. Blend with the sauce.
SAUCE:
½ cup Olive Oil
2 cups chopped Onion
2 cups chopped Red Bell Pepper
1 cup chopped Celery
4 Garlic Cloves, chopped
5 28 oz cans Diced Tomatoes in Juice
1 cup chopped fresh Basil
Salt & Pepper

1. Heat oil in a large pot over medium heat. Add onion, pepper and celery. Sauté until lightly browned. Add garlic, stir for 1 minute and add tomatoes and ½ the basil.
2. Bring to a simmer and cook until slightly thickened. Mix in the rest of the basil, season with salt & pepper.
3 lbs. Pasta
1. Cook pasta according to package directions. Top with the sauce and meatballs.
