3 ribs celery
4 c. cornbread, crumbled
2 c. white bread, crumbled
3 eggs, slightly beaten
1 med. onion, chopped
3 tsp. poultry seasoning or sage
2 cups (or more) chicken broth
Salt and pepper to taste

Directions:
Directions:
Chop the celery; boil in water for about 20 min.
Mix the above ingredients, including the celery water, until thick and soupy.
Bake in 350 degree oven until brown and firm.


Gravy

4 T. fat
4 T. flour
2 c. broth
2 c. milk
1 1/2 tsp. salt (less if broth is salty)
1 tsp. pepper
1 tsp. instant coffee


Heat flour and fat to make a roux. Add broth and milk slowly. Cook, stirring until smooth. Add salt, pepper and coffee.
