1 cup unsweetened applesauce
½ cup honey
1/3 cup oil
1 ½ cups whole wheat pastry flour
1 teaspoon baking soda
½ teaspoon each: salt, cinnamon, ginger, cloves

Option: ½ cup nuts

Directions:

Cream all wet ingredients together.
Mix in all dry ingredients.

Time saving hint: Measure the oil first and swirl it around to coat the measuring cup before pouring out the oil. This will keep the honey from sticking to the measuring cup.

Spoon into cupcake papers until about half full.
Bake in a muffin pan at 350F for 25 minutes.
