Pork Leg (Pernil) 25 lbs
Mojo (bottled item or made fresh from sour oranges,salt,minced garlic and oregano.) If made fresh; Add salt to sour oranges and allow to stand 2 hours before adding garlic and oregano.
Mixture for Pork holes
1 c. olive oil
2 c. minced garlic
2 crushed bay leaves
2 T oregano

Rinse pork leg well. Fit in deep spaced baking pan.
Poke deep holes with sharp knife in pork and add prepared mixture of garlic, bay leaves and oregano in olive oil in each hole. Massage garlic powder over pork when complete with above. Pour Mojo over pork slowly and into sides of pan. Soak overnight and bake next day at 350 degrees until meat thermometer reads done. Allow a few hours baking time for this big size.

This pork does take time and a lot of tender loving care. It will be a wonderful hit however and very much worth all your effort. Smaller size, less time of course.
