2 Chicken Breasts, cut into ½ in. cubes
2 cloves minced garlic
1 tsp. finely chopped ginger
¼ c. chopped onions
4 Tbsp. soy sauce
4 Tbsp. vinegar
3 Tbsp. sugar
¼ c. water
5 potatoes, peeled and cubed
3-4 Tbsp. oil

Directions:
Directions:
Heat the oil in wok over medium heat. Add onion, garlic and ginger. Sauté for about 30 seconds. Add potatoes and fry, stirring often, until almost done. Add salt and pepper if desired. Add the chicken. Continue stirring. In a small bowl mix together the soy sauce, vinegar and water. Sugar will not completely dissolve. Add to potatoes and chicken after they are both fully cooked. Use water to clean out the rest of the soy sauce mixture from bowl and add to dish. Cook until sauce thickens. Serve over rice.
*To kick it up a notch, also add one, diced serrano chili with the onions, garlic and ginger.
