15 oz can organic Garbanzo Beans (save the liquid)
1/2c sundried tomatoes (organic if possible)
1/4 cup pitted olives -- I like black beldis but kalamatas or nicoise will work -- be careful of the strong taste -- again Organic if you can get them.
3 garlic cloves -- yes organic
Salt to taste (I use Himalayan but sea salt is OK)

Put Olives, Tomatoes, and garlic in food processor and blend. Add Garbanzos, salt, and 2T of liquid. Blend. Add more liquid if necessary to get the consistency you prefer.
You can use olive oil instead of liquid but the fat content will go up and the consistency will shift as well.

Serve with celery, carrots, cauliflower and other vegetables. Maybe some flat crackers -- ak-mak and such.
I eat hummus regularly and love it in many places including as a sandwich condiment!
