5 ears fresh corn, husked
1 to 1 ½ cups diced red and green bell peppers
1 red onion, chopped
2 T fresh lime juice
2 T white vinegar
4 T vegetable oil
Fresh cilantro, to taste
Maple syrup, to taste
Salt, to taste

To roast corn, place clean ears (wrapped in aluminum foil) on a baking sheet in the middle of a 400 degree oven. Bake 20 minutes, turning several times. Cut kernels off the cob. Mix corn with remaining ingredients.
