1 baked pie crust

½ to ¾ c sugar
2 tbsp cocoa
2 tbsp cornstarch
pinch of salt
2 egg yolks
2 c milk or Half & Half
2 tbsp butter
1 tsp vanilla
1 c pecans, chopped

Directions:
Directions:
Mix sugar, cocoa, cornstarch and salt together in a bowl and set aside. In a separate bowl, mix the egg yolks and milk and then mix into the dry ingredients. Place in a microwave safe bowl and cook until thickened, stirring every 1–2 minutes with a whisk. This should take about 5–8 minutes depending on the power of your microwave. Remove from the microwave and whisk in 2 tbsp butter, 1 tsp vanilla and 1 c chopped pecans. Cool slightly and pour into a baked pie shell and cool for at least 2 hours. Top with whipped cream or just cover the pudding with plastic wrap to keep the top from drying out.

You can also make this recipe and freeze it instead of putting it in a pie shell. Makes the best fudgesicle pudding ever!
