2 ¾ c flour
1 c sugar
½ tsp baking soda
½ tsp salt
1 c butter or margarine
1 egg
1 tbsp almond extract
1/3 c whole or slivered almonds

Directions:
Directions:
Preheat oven to 325º. Sift dry ingredients together in a large bowl. Cut in the butter until the mixture resembles cornmeal. Mix the egg and almond extract together and add to the dry ingredients, mixing well. If more moisture is needed add a little more extract. Shape dough into 1” balls and place 2” apart on an ungreased cookie sheet. Place an almond on top of each cookie and press down with a floured glass bottom to flatten slightly. Bake for 15 to 18 minutes. Cool on a rack.

Frosting (optional)
Mix 2 c of powdered sugar with 3-4 tbsp butter, a dash of salt, 3-4 tbsp of Half & Half or evaporated milk, ½ tsp vanilla and ½ tsp almond extract. Mix with a spoon or hand mixer. Adjust milk or powdered sugar as needed.
