Ingredients: 2 (3 oz.) pkg. black cherry jello 2 C. hot water 1 large can black bing cherries, pits removed 1 Cup Cherry juice (from can)

Directions: |
Directions:Dissolve jello in hot water and add juice. Place in 9x13 glass pan. Chill until thickened but not set. Add cherries. Chill until firm and spread with topping.
Topping: 1 egg, slightly beaten 1 C. tart lemonade (I buy small can in freezer and make it) 2 T. butter 3 T. flour 1/2 C. sugar 1 3 oz. pkg. cream cheese, softened 1 pkg. dream whip mix*
Melt butter in saucepan, add flour, sugar, egg and lemonade. Cook over medium heat until thickened. Stir in cream cheese and cool. Mix Dream Whip according to package instructions and fold into cooled mixture and spread on top of jello salad. * Substitute about 1/2 of 9 oz. container of Cool Whip in place of dream whip if you like. Sprinkle with chopped nuts if desired. |

Notes: Mom's original recipe calls for 2 large cans of cherries, but they cost a small fortune. I made it many times with only 1 can and it's still good and costs a lot less -- you could cut the cherries in half so you could spread them out more if you like. In case you are wondering, what the deal is with Dream Whip v. Cool Whip. Dream Whip was a mix invented in the 50s -- it came in powdered form, 2 envelopes to a box. You mixed it with milk and vanilla extract and beat it with a hand mixer and it made pretty darn good whipping cream, comparable to Cool Whip. A lot of these recipes were created before Cool Whip which I don't think came on the scene until the late 70s, and that's why they call for Dream Whip instead of Cool Whip.
