2 cups rice
4 cups water
1 whole chicken
2 cups shredded cheese
1 lg can mushroom soup
1 bag frozen broccoli and cauliflower
1 chopped onion
1 Sm can diced green chiles (opt.)

Directions:
Directions:
Bring 4 cups water to boil. Add rice and simmer on low for 20 minutes. Cook and debone chicken. In large 9x13 buttered glass pan add the rice as the bottom layer. Follow this with the chicken, then the onion, then the vegetables. In large bowl mix the grated cheese with the soup. You may add a bit of milk if this appears to thick. Spread this soup mixture over the top of casserole. Bake in 350º oven for 45 minutes. Can be served with croutons on top.

We have been eating this casserole for years. Make it your own with your favorite veggies. It is also very good with ham instead.
