1 lb fresh green beans or 1 can of Blue Lake whole small beans
5 slices of bacon
salt and pepper to taste
2 tbsp. brown sugar
2 tbsp. apple vineger
1 c bean liquor (this is the liquid from cooking the beans)
1/4 tbsp. dry mustard
1 tbsp. flour
2 onions sliced

Directions:
Boil beans in water until tender. Drain, saving 1 c bean liquor. Fry bacon remove bacon from pan. Reserve 1/4 c bacon fat. Cook onion in fat until tender but not brown. Remove from pan, in fat put flour, mixed with brown sugar, mustard and extra salt and pepper to taste. Blend quickly to avoid scorching. Add bean liquor and vinegar. Stir until thickened. Add beans, onions and reheat.
