2 Cups flour
1/4 Teaspoon salt
3 eggs
1 Tablespoon Milk
1 Teaspoon olive oil
3 1/2 quarts water
1 1/2 pound chicken
1/2 onion (quartered)
1 stalk celery (cut into 2 inch pieces)
2 Teaspoons salt
1 Teaspoon black pepper
2 bay leaves
1/2 cup milk
2 Tablespoons Butter

Mix flour and 1/4 teaspoon salt thoroughly and place on counter Make a "well" in center. Place eggs, 1 tablespoon milk and olive oil in bowl and whisk until smooth. Slowly add egg mixture to "well" in flour, and mix together. Knead for 10 minutes. Cut dough into 3 sections and cover with plastic wrap. Allow to sit for 15 minutes. Roll dough as thin as possible. Cut noodles 1/4 inch wide. Cover loosely with plastic wrap and set aside.
Place water, chicken, celery, onion, salt, pepper and bay leaves in large pot and bring to a boil. Reduce heat and simmer for 1 1/2 hours. Remove chicken and bay leaves. Allow chicken to cool and then de-bone. Add milk and butter to broth and return to boil. Add chicken and noodles. Cook over high heat 15-20 minutes, stirring constantly. Remove from heat. Allow to stand for 5-10 minutes. Serve hot.
