8 oz sharp cheddar cheese, grated
8 oz. mozzarella cheese, grated
½ cup sliced green onions
½ cup chopped pecans or walnuts
3/4 to 1 cup light mayonnaise
2 tbsp. yellow mustard
¼ - ½ tsp. cayenne pepper (or more if you like the heat)

Mix all ingredients together. Spray bowl, container, or mold with cooking spray, press cheese spread into container. This makes for easy release onto plate at serving time. Serve with your choice of crackers. Mayonnaise, mustard, and cayenne pepper measurements are approximate. Depending on the dryness of the cheddar cheese, and your preference, it may take a little more or less mayonnaise and/or mustard. Cayenne pepper amount is to taste.
