1/3 cup Bisquick
1/4 cup Parmesan cheese, grated
1/8 t black pepper
2 eggs, slightly beaten
2 T olive oil
2 cups zucchini, shredded

Directions:
Directions:
In a mixing bowl, stir together Bisquick, cheese and pepper. Add in the eggs until the mixture is moist. Fold in the shredded zucchini.
In a 10-inch skillet, heart the olive oil until hot. Use 2 T of the mixture for each round. Drip in and flatten with a spatula. Let them sizzle for 2 to 3 minutes on both sides, until golden brown. Drain on paper towel and serve hot.
