Ingredients:
Ingredients:
1# ground sirloin or extra lean ground beef
Marinara sauce with no added sugar
Low fat Mozarella cheese, shredded
Low fat Ricotta cheese
Fresh shredded parmesan cheese

Directions:
Directions:
Cook beef in small pan till done, then drain and pat dry with paper towels. While beef is cooking add seasonings to taste, like seasoned salt is good. Place back in pan and add marinara sauce, enough to completely cover beef. I used 1 -16 oz jar. Let simmer about 30 minutes.
This makes enough sauce for two 1 pint dishes of lasagna, so I freeze half of it.
Cover bottom of 1 pint baking dish with meat sauce. Then add layer of mozarella, enough to completely cover the meat sauce. Then add ricotta cheese completely covering the mozarella. Then add one more layer of meat sauce and your dish should be quite full. Spread the shredded parmesan cheese on the top. Bake at 350 degrees for about 30 to 45 minutes till hot and bubbly. Let sit for a few minutes, maybe 10 to 15 so you can portion it easier.

Personal Notes:
Mine is made for one person to eat over a week. For more people just use a bigger baking dish and use all the meat sauce, with as many layers as the dish will take. My new stomach handled it really well once I got to the soft diet stage. I made sure I crumbled the meat into tiny pieces before I added the marinara sauce.
