6 eggs
1 c. milk
1 c. flour
1/2 c. butter (margarine works, too)
1/2 t. salt

Melt butter in 9 x 13 in. pan ( glass works best). Whip eggs and milk. Sift flour and salt and add to milk and eggs. Bake at 400º for 20 - 25 min. Serve immediately.

I like to serve this with Apple - Raisin sauce. The recipe is also in this cookbook.
Half of this recipe fits nicely in a cast iron skillet, and bakes very well that way.
