1/2 lb flour, 1 tsp baking powder, 1/2 tsp salt, 1/2 cup sugar, milk-start with 1/4 cup and add just enough to moisten the dough.

Mix all dry ingredients together in a large bowl. Using a spoon, stir in enough milk to moisten the dough. Add small amount of oil to griddle to fry the slims. When oil is hot on griddle, turn down temperature and put about 2 T. of dough on griddle. Fill griddle with the dough, similar to pancakes. As the slims brown, turn over and fry the other side.

Jamie's (cousin of the children of Grandpa Dan McGraw) wife Teresa baked slims and many other delightful treats at their residence, 38 Corkey Road, Loughgiel, Northern Ireland. I watched and took notes. When Teresa was preparing the dough, she didn't measure. 2 handfuls of sugar is about a 1/2 cup. Slims are a fried bread. They put jam on them and ate them either hot or cold.
