2 Tbsp butter
1/2 c chopped carrots
1/2 c chopped celery
1/2 c chopped onions
1 can (10oz) Ro-Tel Whole tomatoes & green chilies
1/4 c dry sherry
3 (15oz) cans black beans, undrained
1/4 c cilantro

Directions:
Directions:
In a large pot melt butter. Add carrots, celery,
and onions; cook until tender, about 15 minutes.
Add the remaining ngredients; heat to a boil.
Reduce heat and break up the tomatoes.
