Ingredients: 3 or 4 ripe bananas - mashed to equal about 1 C. 1/3 C melted butter 1/4 C natural unsweetened applesauce 1/3 C brown sugar 1/3 C white sugar 2 egg whites lightly beaten 1 teaspoon real vanilla 1 teaspoon baking soda 1 tsp. baking powder 1 1/2 cup of flour (can use up to 3/4C whole wheat flour & 3/4 C plain flour) Optional 1/2 C choc chips, nuts or dried fruit per loaf for variety

Directions:Preheat the oven to 325°F. Mash bananas in blender or with hand mixer till creamy, add applesauce. Cream butter and sugars in large mixing bowl. Add eggs one at time beating after each addition. Add the flour, baking soda, powder and salt over the mixture and gently mix in. Add vanilla. Mixture will be thick, so spoon into 2 lightly greased and floured loaf pans. Bake for approx. 1 hour. Bread is done when center springs back lightly from touch. do not use toothpick, as moistness of bananas will always stick to toothpick. Cool in pan for 10 minutes then remove to rack. When completely cool double wrap in plastic and foil to preserve freshness. Can be stored in refrigerator. Great toasted or microwave. Can also be frozen |

Notes: This is the lighter version of my grandmothers original recipe. Half the fat has been replaced with applesauce which makes the loaves lighter and more flavorfull. You can replace up to 1/2 the sugar with splenda to further reduce the calories.
