Cake:
2 cups flour
2 tea. each baking soda, powder and cinnamon
2 cups sugar
4 eggs
1 cup vegetable oil
1 1/2 cups flaked coconut
2 cups grated carrots
1 15 oz. can crushed pineapple
1 cup nuts, optional
Frosting:
8 oz. cream cheese, room temp.
1 stick butter, room temp.
1 lb. powdered sugar
1 tea. vanilla

Directions:
Directions:
Beat oil, sugar and eggs. Add flour, baking soda and cinnamon. Add rest of ingredients. Pour in 9x13 greased pan and bake at 350º for 35-40 min. until lightly browned and pulls away from pan sides. Doesn't raise much. Frost when cool.
Frosting: Beat cream cheese and butter till fluffy. Cream in sugar and vanilla till smooth.
