3 CUPS YAMS (SWEET POTATOES)
4 EGGS SLIGHTLY BEATEN
1 CUP BROWN SUGAR + 1/2 CUP WHITE SUGAR
2 TSP CINNAMON
1 TSP SALT
1/2 TSP NUTMEG
1/2 TSP GINGER
1 TBSP VANILLA
2 CANS SWEETENED CONDENSED MILK
2 UNCOOKED PIE SHELLS (I USE THE PILLSBURY REFRIGERATED PIE SHELLS)

COMBINE EGGS, YAMS (SWEET POTATOES), SUGARS, SALT, SPICES AND VANILLA. GRADUALLY ADD SWEETENED CONDENSED MILK. POUR INTO UNBAKED PIE SHELLS. BAKE IN HOT OVEN 425 DEGREES FOR 15 MINUTES. REDUCE TO MODERATE HEAT 350 DEGREES FOR 45 MINUTES.
