2 cans hominy, drained
3 cans Hatch mild green enchilada sauce
1 large onion
3 cloves garlic
2 t. cumin
1 t. salt
2-1/2 lbs pork loin or chicken
2 red chiles
Add 1 C. fresh cilantro and 2 T lime juice at end of cooking

Add all ingredients to crock pot - cook over low heat for 8 hours. Add cilantro and lime juice at end of cooking
