2 cups grated zucchini (about 2 large)
1/4 cup each, olive or canola oil, freshly grated Parmesan cheese and chopped onion.
1 whole egg and 2 egg whites
1/2 cup Bisquick
1/2 teaspoon each: salt, Mrs. Dash Garlic and Herbs and Cavender's Greek Seasoning

In a large bowl, mix zucchini, oil, Parmesan, onion, eggs, baking mix, salt and seasonings.
Pour into a 9-inch glass pie plate coated with vegetable oil spray. Bake at 325º 30 to 35 minutes or until a knife inserted in center comes out clean.
