4 catfish fillets
Salt and pepper or
a spicy blend such as Creole seasoning.
1/3 cup yellow cornmeal
1 tbsp paprika

Directions:
Directions:
Sprinkle the catfish fillets with salt and pepper or-- use a spicy blend. Mix cornmeal and paprika in a shallow dish. Dredge fillets in cornmeal mixture and spray with vegetable cooking spray. Cook in a hot, nonstick skillet over medium heat 3 to 4 minutes on each side.
