Pie Filling:
2 pt. fresh strawberries
2 (10-oz.) boxes frozen strawberries
1 1/2 c. sugar
1 1/2 c. water
6 T. corn starch
1 (3-oz.) package strawberry Jello

Pie Dough:
3 c. all-purpose flour, unsifted
1 c. lard
1 1/2 tsp. salt
1/2 c. water at room temperature

PIE DOUGH:
Sift flour and salt together. Add lard and blend with pastry blender until size of peas. Add 1/2 cup of water all at once and fold together. Roll out dough to make 2 large pie crusts. Place in 9"-10" pans. Prick the bottoms with a fork in many places. Bake at 425ºF for 12-15 minutes or until golden brown. Remove from oven and let cool.

PIE FILLING:
Combine corn starch, sugar and water and bring to a boil until clear and stiff, stirring constantly. Add one package of strawberry Jello. Remove from heat and stir until dissolved. Add frozen strawberries and stir until melted and well mixed. Let cool.

Place ripe strawberries in the bottom of the cooled pie crust. Pour the glaze over the strawberries, making sure that every berry has a coating. Place in refrigerator to set for 2 - 3 hours. Serve the first day.
