1/4 cup Butter
1/2 cup Diced Onion
1/2 cup diced Carrots
1/2 cup diced Celery
1/4 cup Flour
1 1/2 T. Cornstarch
4 cups Chicken Stock
4 cups Milk
1/2 t. Soda
1 lb Old English Cheese-cut into pieces
1 t. Salt
1 T. dried Parsley
dash White Pepper
dash Cayenne Pepper
Paprika for garnish

Directions:
Directions:
Melt butter in heavy saucepan. Saute onion, carrots and celery until tender. Stir in flour & cornstarch, cook until bubbly. Gradually add chicken stock and milk. Blend into smooth sauce, add baking soda and add cheese. Stir until thickened, season with salt & taste of white pepper. Add parsley and cayenne pepper.

Garnish with paprika.
