12 flour tortillas, taco size
1 large sweet onion, diced
3 cups shredded cheddar cheese or mixture of cheddar and monterey jack cheese
2 - 3 cans cheap chili with beans, mild or spicy as you prefer

Directions:

Heat flour tortillas in microwave covered with wet paper towels to slightly soften. Place about 1/2 can of chili in bottom of 9x13 pan to cover bottom of pan (you can add a little water in pan and stir it around a bit so it covers pan more easily. Place generous amount of cheese down center of each tortilla, sprinkle generous portion of diced onion over cheese, and roll tortilla up, secure with toothpick. (Leave ends open). Lay each rolled enchilada in pan on top of chili (best if they are jammed in -- no space between them). Pour remaining chili over top -- covering all exposed tortilla. Sprinkle with more grated cheese and any leftover diced onion and bake at 350 for about 10 to 12 minutes, until cheese is melted and hot. Do not over bake. Serve with guacamole and sour cream. Very easy, Tex-Mex style food and comforting.

Also good to add diced chili peppers inside each enchilada. Of course, you could also put cooked ground beef inside them also. Be careful not to eat the toothpicks!

I invented this recipe when I lived in Texas and June flipped out over this simple dish and it continued to be a favorite of hers through the years. Can be reheated in microwave with wet paper towel on top.
