1 9" unbaked pie crust
1 C firmly packed brown sugar
2 T flour
2 1/4 t pumpkin pie spice
1/2 t salt
1 egg
1 1/2 C (1 lb.) canned pumpkin
1 (12 oz) can evaporated milk

Directions:
Directions:
Preheat oven to 375º. In a large bowl, mix brown sugar, flour, spices and salt. Stir in egg. Beat in pumpkin and evaporated milk until smooth. Pour mixture into prepared pie crust. Bake 50 - 55 min. or until knife inserted 2" from edge comes out clean.

The following ingredients can be substituted for pumpkin pie spice: 1 1/4 t cinnamon, 1/2 t nutmeg, 1/2 t ginger, and 1/4 t ground cloves.
