1 stick of oleo, melted
1 1/2 c sugar
3 eggs, well beaten
1 c flake coconut
1 T vinegar
1 tsp vanilla
8 or 9 inch pie shell

Combine all ingredients and pour into an unbaked 8 or 9 inch pie shell. Bake in 325º oven for 45 minutes to one hour. The pie should be firm when taken from oven.

This was my Mother's recipe. I love coconut and chess pie and this combines the two. This is so easy and you can keep the ingredients on hand for those times when you need a dessert or dish for something unexpected that might come up.
