1 1/4 cup sifted cake flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3 eggs
1 teaspooon vanilla
2/3 cup sugar
2 teaspoon finely grated lemon rind
3/4 cup melted butter or margarine, cooled

Directions:
Directions:
Sift together flour, baking powder and salt. Beat eggs until light; add vanilla. Gradually beat in sugar and continue beating until volume has increased to about 4 times the original; fold in lemon rind. Graduallly fold in flour mixture, then stir in butter. Brush tin muffin cups, 1 3/4 inch, with butter. Spoon about 1 tablespoon batter into each cup, filling about 2/4 full. Bake in 350-degree oven for 12 to 15 minutes or until golden brown. Remove cakes to cooling rack and sift confectioner's sugar over tops.
