2 celery ribs, sliced
1 medium onion, chopped
1/2 green pepper, chopped
1/2 red bell pepper, chopped
4 to 5 cloves garlic, minced
1/2 teaspoon dried thyme, crushed
3 tablespoons olive or vegetable oil
1 16-ounce can crushed tomatoes
1/2 cup chicken broth
2 to 3 teaspoons hot pepper sauce
Salt and pepper to taste
2 pounds shrimp, shelled and deveined
Hot cooked rice

Directions:
Directions:
Cook celery, onion, green pepper, red bell pepper, garlic and thyme in oil until tender; about 10 minutes. Stir in crushed tomatoes, broth, hot pepper sauce, salt and pepper. Heat to boiling. Reduce heat to low; cover and simmer for 5 minutes. Add shrimp; cook until shrimp are done, about 5 minutes.
Serve over hot cooked rice.
Yield 6 servings
