This is a recipe for wheat-free scones and was used daily at Bastry University where I went to Medical school. The flour was measured by weight not by cups. I never converted it to cups.

1-1/2 pounds oat flour
1/2 pound rice flour
2 tablespoons baking powder
1 tablespoon cinnamon
1/2 tablespoon salt
3/4 pound raisins
1/2 pound butter
6 eggs
1/2 cup honey
1-3/4 cups soymilk (plain)

Directions:

Mix all ingredients together and shape into scones or muffins. Cook at 400 degrees until brown.

The original recipe was for 4 dozen scones. That's 3 pounds of oat flour and 1 pound of rice flour.....and it seemed too big for just my family. It's great for people allergic to wheat.
