2 cups grated squash or zucchini
3 eggs
1 cup oil
2 tsp. Vanilla
2 cups sugar
1 tsp salt
1 tsp baking powder
3 cups flour
3 tsp cinnamon
1/2 cup nuts

Directions:
Directions:
Combine eggs, oil and Vanilla. Add the sugar and beat well. Add the grated zucchini. Sift flour, soda, baking powder, and cinnamon together. Add to the zucchini mixture. Fold in 1/2 cut nuts.

Bake 325º for 1 hour.

I usually make 3 small loaves. Oh, do you know why L.D.S. church goers lock their cars during Sunday services. So they won't be filled with zucchini when they return to them after their church meetings.
