1 medium eggplant
1 egg (well beaten)
1 small onion (chopped)
1 can tomatoes
1/2 cup chopped jalapenos
1/2 Ib Velveeta cheese (grated)
1/2cup butter bread crumbs
2 T melted margarine
1 cup dry bread crumbs

Directions:
Directions:
Pare eggplant and cut in 1 inch cubes and cook in boiling salted water for about 8 minutes. Drain. Add tomatoes, butter, onion, cheese, egg, dry bread crumbs and jalapenos. Mix well and place in a one quart baking dish. Top with buttered bread crumbs. Bake @ 350º about 30 minutes.
