1 lb. thin spaghetti or linguine noodles, cooked to "al dente"

3 cloves garlic
1/2 C. extra virgin olive oil
4 tomatoes chopped
"Lots" of fresh basil, chopped

Directions:
Directions:
Cook spaghetti or linguine in salted boiling water and rinse well with cold water. Drain well

Chop tomatoes and toss with spaghetti. Roll basil into cigar shape and chop coarsely.

Mince garlic and add to oil and toss over spaghetti mixture -- refrigerate over night, stirring occasionally. Serve cold.

If you plan ahead, you can mix the garlic and olive oil the day ahead so the flavors are more infused when you add it to the spaghetti mixture -- but you still need to let the mixture chill overnight before eating.
