2 1-inch thick veal chops
2 tsp dried tarragon
All purpose flour
2 Tbs unsalted butter
1/2 c. dry white wine
1/2 c. beef broth
2 Tbs fresh lemon juice
Salt & pepper to taste

Directions:
Directions:
Season veal with salt, pepper and 1 teaspoon tarragon; dust lightly with flour. Melt butter in a medium skillet over medium-high heat. Add veal and cook until light brown and just cooked through, about 6 minutes per side.

Transfer veal to a plate. Add wine, broth, lemon juice and remaining tarragon to skillet. Boil until juices thicken slightly, about 5 minutes. Return veal to skillet and cook until just heated through, about 1 minute. Serve immediately.
