1 box large shell pasta
10 potatoes
1/2 lb. shredded cheddar cheese
1/2 C. butter
2 eggs
Salt and pepper


Directions:
Directions:
Cook shells per package directions, rinse and drain. Peel and cook potatoes until tender -- drain and mash with 1/2 C. butter, add salt and pepper and fold in grated cheese. Stuff shells with filling mixture and arrange in single layer in 9 x 13 baking pan.

Sauce:
1 C. butter
1 or 2 large onions

Saute sliced onions in butter -- cook until soft, not brown, pour over shells, cover with foil and bake at 350 for 25 - 30 minutes. Serve as side dish with sour cream.

Much easier than homemade pierogi and less expensive than the frozen ones. I'm including a lot of pierogi recipes as it has always been a favorite in our family. This is also a good pot luck dish.
