2 c. flour
1/2 tsp. salt
1 tsp. vanilla
2 c. rolled oats
3/4 c. nuts (normally peanuts)
2 eggs
1 c. white sugar
1 c. brown sugar
1 c. shortening

Directions:
Directions:
Mix flour and salt. Blend shortening and sugars in a large bowl, add eggs and beat with large spoon or wire whisk. Add flour mixture and mix well. Add oats, vanilla, and nuts. Drop by spoonfuls to cookie sheet. Bake 15 minutes at 350ºF.

We never had oatmeal raisin cookies when we were growing up, we always had oatmeal peanut cookies, which mom called Cowboy Cookies.
