1 cup sugar
1/4 lb. margarine or butter
2 eggs, lightly beaten
3 very ripe bananas (mashed)
2 tbsp. water
1 tsp. vanilla (butternut flavor if you can find it)
2 cups flour
1/4 tsp. salt
1 tsp. baking powder

Preheat oven to 350ºF. No need for a mixer, use a large mixing bowl and a big spoon. Start by mixing butter into the mashed bananas. Add in the sugar, eggs, and vanilla and mix. Sprinkle baking soda and salt over the mixture and mix in. Add the flour and water last, mix. Spray Pam into a 4x8 inch loaf pan and pour mixture in. Bake for 1 hour. Cool on a rack, remove from pan and slice.
